Fall always brings on this need to make something with pumpkin or apples, so this recipe is perfect! The flour blend recipe is here, and if you don’t have a need to use flours other than wheat, just substitute regular flour and LEAVE OUT the xanthan gum. This recipe can also be made into a loaf, but I like the portability of muffins, and they freeze well. The secret in these muffins is in the first step. I store these in the refrigerator or freeze at least half of them.
